This recipe has been used in my family for a long time! We like to use it for any holiday or special occasion as a brunch entree. I’ve tried to make this breakfast casserole with whole wheat bread to add some healthy “ooomph” to it, BUT it just doesn’t taste very good to be honest. So I stuck with my favorite french bread. Any soft bread will work! This is otherwise known as our family’s last name, Christy Casserole!
1/4 tsp salt
1 Tbsp Italian seasoning (optional)
Preheat oven to 350 degrees F.
- In a skillet, add the lean ground turkey until fully cooked and has no pink; about 10 minutes. Set aside.
- Cut the bread into small cubes
- Beat eggs, soymilk, salt, and black pepper (and optional Italian seasoning)
Place bread in the bottom of a greased 9 x 13 pan
Add the ground turkey and cheese on top
Pour egg mixture in the pan and press down lightly with hands, moving the bread pieces around until most are soaked in the liquid
Bake 30-45 min until set in center and lightly browned
*Use any cheese you like; Cheddar tastes great also!
*Use any milk, I just use soymilk because of lactose intolerance
*Could substitute the ground turkey for 5 (14 oz) chicken sausage links. I use Al Fresco Chicken Sausage, among their many flavors.
