The Queen Anne neighborhood farmer’s market in Seattle is my favorite! As I walked around, there were local musicians to set the evening mood. Vibrant, colorful fruits and vegetables around, including local bakeries, tons of food trucks, wine, beer, and kombucha tasting! The “food walk” is always the best and a very inviting stroll after work!!

My Odd Discovery of the Week: Duck Eggs
Duck eggs are 30% larger than medium chicken eggs, being 3 – 3.5 oz. In comparison, chicken eggs are about 1.7 oz. Duck eggs also have less water and more fat. There is a thicker shell so they will stay fresher longer, unlike chicken eggs.
Nutrition –
The content is made up of 130 calories, high in cholesterol, 9g protein, 9.6g fat, 1g carbohydrate, selenium, and iron. Also they have high zinc, phosphorus, and calcium. 1 egg is typical per day (619mg).
High in vitamins A, B12, D, and high in omega-3.
Recipes –
Duck eggs cook and bake up very similar to chicken eggs, so use them up! If you overcook them, they may get a rubbery texture. Keep in mind that duck eggs are larger in volume and may provide more fluid to your product. A couple good things about baking with these, since the eggs have less water and more fat, cakes and breads will have a better rise, cookies will be more moist and chewy, and custards like quiche will be fluffier and creamier.
