Happy National Muffin Day – in honor of yesterday

As soon as I saw that it was National Muffin Day, I was inspired to come up with a creation! Although every national (food) holiday I want to have an excuse to celebrate and create something. Muffins are little quick bread packages, already the perfect portion size, and ready to take on the go. Yesterday I revamped my Sesame Poppy Banana Bread by using whole wheat pastry flour, added chocolate chips, and turned them into muffins.


Muffins vary in different types such as soft and moist American muffins like we are used to, English muffins, Portuguese muffins, cruffins, duffins, and muffin tops. All sweet and savory flavors to discover! Cruffins are a cross between a croissant and muffin. Duffins are a cross between a donut and muffin. Portuguese muffins are very similar to English muffins except a bit sweeter and larger. I have yet to try these; I especially want to try the Cruffin! The never ending multitude of muffins sounds great to try and recipe test: brownie muffins, cheese muffins, fruit filled, zucchini muffins, spud muffins, cornbread muffins, breakfast egg muffins, maple bacon muffins. So try a new muffin, make your own, or discover muffins in your city!(1,2)

Muffin Extravaganza:
- At breakfast time
- Snack time
- Take to work for lunch
- Freeze a batch so they last longer. Then I can easily individually wrap them and they can defrost in time.
Toppings (depending on the muffin):
- Butter
- Jam
- Whipped cream cheese
- Peanut butter
- Ricotta
- Honey
