Make in the crock pot (slow cooker) a simple hearty meal being SOUP, especially during this cold-ish weather! Take leftover ingredients from your pantry and refrigerator to see what you can create. Chop up meats, veggies, use beans, any kind of broth or stock, and lots of seasonings.
You could even use dried beans in the crock pot which saves you money and contains less sodium than canned beans. An option is to soak them overnight, then start the crock pot in the morning OR simply add them the morning of. Dried beans should take about 6-8 hours to soften for soup. Soaking the beans overnight (optional) will just help them soften further and faster.
When the soup is done, this makes for a fantastic meal or even a healthy snack. Keep in the refrigerator for about 1 week or the freezer for up to 3 months.
