Quinoa Breakfast Bowl

Breakfast can be a scramble to make, especially if you are very busy in the mornings!  I like to make breakfast ahead of time in the form of a casserole, quiche, or bowls….when I can.  Enjoy this whole grain make-ahead dish full of plant protein and fiber for a hearty breakfast and satiety.  This simple and tasty dish contains quinoa, pesto, sunflower seeds, tomatoes, and avocado.  Option to serve under a small bed of mixed greens.  I enjoy this breakfast as a cold or hot dish!

Helpful Holiday Eating Pt. 1

How do you want to feel going into the new year?  What habits do you want to form or remove from daily life?  When making changes, start small, set a few realistic goals.  These can be eating smaller portion sizes, experimenting with Meatless Mondays, or adding one (1) vegetable to each meal…..and yes breakfast also.  The goal is to stick with your changes long term and make adjustments as needed.

In honor of National Muffin Day

Happy National Muffin Day – in honor of yesterday

As soon as I saw that it was National Muffin Day, I was inspired to come up with a creation! Although every national (food) holiday I want to have an excuse to celebrate and create something. Muffins are little quick bread packages, already the perfect portion size, and ready to take on the go.  Yesterday I revamped my Sesame Poppy Banana Bread by using whole wheat pastry flour, added chocolate chips, and turned them into muffins.
